
☕ Coffee & Walnut Cupcakes (Cosy & Classic)
There’s something about coffee and walnut that just feels comforting.
Warm, slightly nutty, and perfect with a cup of tea on a slow morning 🤍
These cupcakes are soft, lightly coffee-flavoured, and topped with a creamy coffee buttercream — simple, cosy, and always a favourite.
🧁 Ingredients
For the cupcakes:

150g butter (softened)

150g caster sugar

3 eggs
-
150g self-raising flour
-
1 tsp baking powder
-
2 tbsp strong coffee (cooled)

50g walnuts (chopped)
-
1 tsp vanilla extract
For the coffee buttercream:
-
200g butter (softened)
-
400g icing sugar
-
1–2 tbsp strong coffee (cooled)
-
1 tsp vanilla extract
🍳 Method
1. Prep
Preheat your oven to 180°C (160°C fan) and line a cupcake tray with cases.
2. Make the batter
In a bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, mixing well after each.
3. Add flavour
Stir in:

Vanilla extract

Coffee
Then gently fold in the flour and baking powder.
4. Add walnuts
Fold in the chopped walnuts.
5. Bake
Spoon the mixture into cupcake cases (about ¾ full).
Bake for 18–22 minutes until golden and springy.
Leave to cool completely.
☕ Buttercream
Beat the butter until smooth.
Gradually add icing sugar, then mix in:

Coffee
-
Vanilla
Whip until light and creamy.
🧁 Decorate
Pipe or spread the buttercream onto the cooled cupcakes.
Top with:

A walnut half
-
A light dusting of cocoa (optional)
